Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
These oatmeal biscuits are tender, chewy, and full of banana flavor! The recognizable cozy spices and plump blueberries make them even more irresistible. They will keep for read here a minumum of one week if stored in an airtight container in the refrigerator--if they last that long!
1 cup (100g) instant oats (fermented if essential and quantified like this)
3/4 cup (90g) whole wheat or fermented * flour (measured like that )
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 teaspoon salt
1 tsp vanilla extract
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. Stir in the maple syrup. Add the flour mixture, stirring only until incorporated. Fold in the raisins. Allow the cookie dough rest for 10 minutes.
Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, drop the cookie dough to 15 rounded scoops on the prepared sheet, and apply to the desired depth and width by means 20+ Easy Healthy Cookies - Recipes for Low Calorie Cookies ... of a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to quantify both the wheat and oats properly using this technique or a kitchen scale. (? That's the one I have and adore!) Too much of either will dry out of the biscuits and render them cakey rather than chewy.
Immediate oats are also known as quick-cooking or minute oats. They are available in huge canisters, just like old-fashioned oats. They are not the ones in the small flavored packets of oatmeal. To make your own, add the same amount of traditional oats to a food processor, and pulse 10-12 times or until the oats are about 1/4 into ? of the original size.
For the gluten-free flour, I suggest the following mix: 1/2 cup (60g) millet flour, 2 tbsp (15g) tapioca flour, 2 tablespoons (15g) brown rice flour, as well as 1/2 teaspoon xanthan gum. Most store-bought gluten-free flour blends (such as that one!) Will also work, if measured like this.
